Instructions:

- Take a low carb tortilla and spoon a portion of the chicken mixture into the center. Roll the tortilla and place it seam-side down in a baking dish. Repeat this process for the remaining tortillas and chicken mixture.
- Pour the remaining white enchilada sauce over the rolled tortillas, spreading it evenly to cover them.
- Sprinkle the shredded Monterey Jack or Mozzarella cheese over the top of the enchiladas.
- Bake the enchiladas in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly, and the enchiladas are heated through.
- Remove the baking dish from the oven and let the enchiladas cool for a few minutes before serving.
