Ingredients:
For the taco meat:
- 1 lb ground beef (or ground turkey/chicken for a leaner option)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet (about 2 tbsp) taco seasoning mix (make sure it’s keto-friendly or use homemade)
- 1/2 cup low-sodium beef broth or water
For the casserole layers:
- 2 cups cauliflower rice (frozen or fresh)
- 1 cup shredded cheddar cheese (or Mexican blend)
- 1/2 cup diced tomatoes (canned or fresh)
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
- 1/4 cup sliced jalapenos (optional, adjust according to your spice preference)
- 1/4 cup sour cream (full-fat)
- Fresh cilantro, chopped, for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add the ground beef and cook until browned. Break it apart with a spoon as it cooks. Drain any excess fat if needed.
- Add the chopped onions and minced garlic to the skillet with the beef. Cook for 2-3 minutes until the onions are soft and translucent.
- Stir in the taco seasoning mix and beef broth (or water). Simmer for a few minutes until the liquid is reduced and the mixture thickens. Remove from heat and set aside.
- In a separate skillet, sauté the cauliflower rice over medium heat until it becomes tender. This should take about 5-7 minutes. If using frozen cauliflower rice, follow the package instructions.
- In a 9×13-inch casserole dish, layer the cooked cauliflower rice on the bottom.
- Spread the taco meat mixture over the cauliflower rice layer.
- Sprinkle shredded cheddar cheese over the top of the taco meat.
- Add diced tomatoes, sliced black olives, chopped green onions, and sliced jalapenos (if using) on top of the cheese layer.
- Bake the casserole in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
- Remove the casserole from the oven and let it cool for a few minutes.
- Drizzle the sour cream over the top and garnish with fresh chopped cilantro.
- Serve the Keto Taco Casserole warm, and you can also top it with extra avocado slices, more sour cream, or your favorite keto-friendly salsa if desired.
