Ingredients:
For the Cauliflower Mash Topping:
- 1 large head of cauliflower, cut into florets
- 2 tablespoons unsalted butter
- 1/4 cup heavy cream
- Salt and black pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
For the Shepherd’s Pie Filling:
- 1 lb (450g) ground beef or lamb
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced bell peppers (any color you prefer)
- 1 cup beef broth or bone broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions:
- Cauliflower Mash Topping:
- In a large pot, bring water to a boil and add the cauliflower florets. Cook for about 8-10 minutes until the cauliflower is tender.
- Drain the cauliflower and return it to the pot.
- Add the butter and heavy cream to the pot with the cauliflower.
- Use an immersion blender or a potato masher to mash the cauliflower until it reaches a smooth and creamy consistency.
- Season with salt and black pepper to taste. If you want a cheesy topping, stir in the shredded cheddar cheese until it melts. Set aside.
- Shepherd’s Pie Filling:
- In a large skillet or frying pan, heat the olive oil over medium-high heat.
- Add the diced onions and minced garlic, sautéing until the onions are translucent and the garlic is fragrant.
- Add the ground beef or lamb to the skillet and cook until it’s browned and fully cooked, breaking it up into smaller pieces with a spatula.
- Stir in the diced carrots, celery, and bell peppers. Cook for a few minutes until the vegetables start to soften.
- Pour in the beef broth or bone broth, and then add the tomato paste, Worcestershire sauce, dried thyme, dried rosemary, salt, and black pepper. Mix well to combine.
- Let the mixture simmer for about 10-15 minutes until the flavors are well-blended, and the liquid has reduced to a thick and flavorful sauce.

- Preheat your oven to 375°F (190°C).
